Fast Low Carb Meal
In our fast paced and busy lives it can be difficult to eat healthy. With my schedule it becomes difficult to go grocery shopping often and everything we cook needs to be fast and efficient. We tend to keep a box of organic chicken breast from Costco in our freezer. It's around $15 and individually wrapped for fast defrost (substitute vegan alternative here). At Costco we also found a cauliflower stir fry and gluten free low sodium sausage. Today for my post-workout meal, I put all of this together with an egg and Coconut Aminos (soy sauce alternative). Coco aminos is gluten free, soy free, low sodium and to me it tastes better than soy sauce. This meal took about 10-15 minutes to cook. Ingredients: chicken breast, sausage, egg, garlic powder, a pinch of Adobo, and coconut aminos. Delicious!
Find what works for you. Plain stir fry veggies or stir fry cauliflower is a great way to get your veggies in quickly and full of flavor. Keep healthy frozen sides, and fresh veggies you can throw together in multiple ways to create a meal.
